Besides a variety of ramen options, diners may enjoy an electric menu that features temaki, hand-made gyoza and so much more. ZUBU has expanded to four locations in the Lower Mainland; Olympic Village, Kerrisdale, Metrotown, and Park Royal in West Vancouver.

Kouichi Nishioka

I grew up in the Yamaguchi prefecture, where my uncle still owns to this day, a very humble ramen shop. That’s where I first learned to cook. I realized the commitment and effort it takes to make ramen, and aspired to be like my uncle but on a different level. I ended up working for several other ramen and Japanese restaurants, before eventually moving to Canada. At the time, I was delighted to discover that ramen hadn’t yet made its mark, unlike sushi. A whole ramen revolution happened over the next few years, where myself, and many other talented chefs helped pioneer.

I continued to study and learn, and with the help of my team, accomplished my dream of not just owning a restaurant, but surpassed being part of a brand with integrity and massive potential.

I’ve built very close relationships with the team helping turn my vision into reality, and that’s what ZUBU actually is; To build tight or close relationships through common goals, interests, and dreams. I want the same thing for every guest that dines at ZUBU. I want them to create close relationships and lasting memories with my ramen.

I want guests to feel satisfied yet craving more. Not just for the food, but for the whole ambience.
I enjoy seeing guests devour my ramen…or slowly savouring it. I hope to create generations of ZUBU lovers within our communities.

Anthony AJ Lim

Vancouver born AJ Lim has nearly 20 years of hospitality experience, starting his career with hotels before moving into the kitchen environment to better bridge the gap between front and back of house. AJ excelled as a mixologist before moving to manage several prized restaurants around the city.

AJ travels often to educate his palate on different cuisines from around the world, and to engage with local communities. His goals are to bring people from all walks of life together, to foster memories and friendships that can last a lifetime, through authentic food made with love.

Lim’s taste for travel and a pursuit to create meaningful memories, ensures his creations are a fusion of unexpected flavours. Expect to explore unique riffs, signature surprises and a lineup that leans heavily on premium locally distilled spirits.

Spicy Creamy Vegan.
“Even though I eat meat, I enjoy this ramen at least 3 times a week easily. Our signature kuro garlic oil, hearty soy bean and earthy mushrooms creates a savoury and addictive flavour. Overall, the dish brings harmony to my palate with its rich broth and delicate noodle texture. My mouth especially waters when adding fried brussel sprouts and seasoned egg.”

Andy Wu

Andy Wu has a substantial amount of experience ranging from different industries, but shines prominently in the Food & Beverage sector, opening 11 successful businesses in less than 10 years. Andy is also a nationally well renowned radio personality, and award winning singer/performer.

With ZUBU, Andy culminates his vast knowledge of the industry, to work with a closely knit team to better serve communities around the Greater Vancouver area and beyond for years to come.

“We take great pride in our hand-made Gyoza and wonton, and these dumplings have a special place in my heart…and my stomach! With different varieties and cooking methods, I tend to eat it everyday! I’m excited to serve my favourite dishes to our communities in the hopes that they’ll taste and experience the love used to prepare their food.”

  • - All dine-in guests will be offered hand sanitizer prior to entering.
  • - Hand sanitizer stations are available throughout the restaurant for guest use.
  • - All guest table surfaces will be disinfected thoroughly between use.
  • - Stringent hygiene protocol training has been implemented for all employees.
  • - All employees will be wearing PPE and following strict hygiene protocol within the restaurant at all times.
  • - No cash transactions will be accepted.
  • - All guests are asked to maintain a physical distance of 6 feet between them and other restaurant guests.
  • - Groups will be seated six feet apart with a maximum of 6 people per table.
  • - Washrooms will be sanitized every 30 minutes.
  • - Menus are available on our website. Single-use menus are also available.
  • - A maximum of 50% occupancy will be followed.

Any guest exhibiting COVID-19 related symptoms will be asked to return when they are well.
